1/4 cup melted butter or margarine
1 cup sugar
3/4 cup 2-3 mashed bananas (very ripe, if not so what)
1 cup cranberries fresh or frozen
Beat sugar, butter, egg until smooth. Mix in fruit.
1 1/2 cup flour
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
Mix dry ingredients together well. Add to banana mixture. Stir only enough to moisten. Scrape into greased loaf pan 9+5+3 inch. Bake at 350 F (180 C) for 1 hour or until a wooden stick, knife or toothpick comes out clean.
Let cool. If desired drizzle with icing sugar glaze.
Tips: Let frozen cranberries thaw a bit or you will find your batter difficult to mix properly. This photo was taken a few years ago; I may have used two smaller pans unless I had doubled the recipe.
