Lippy Lamb “banana cranberry” Loaves

1/4 cup melted butter or margarine

1 cup sugar

2 eggs

3/4 cup 2-3 mashed bananas (very ripe, if not so what)

1 cup cranberries fresh or frozen

Beat sugar, butter, egg until smooth. Mix in fruit.

1 1/2 cup flour

1 1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon cinnamon

Mix dry ingredients together well.  Add to banana mixture. Stir only enough to moisten. Scrape into greased loaf pan 9+5+3 inch. Bake at 350 F (180 C) for 1 hour or until a wooden stick, knife or toothpick comes out clean.

Let cool. If desired drizzle with icing sugar glaze.

Tips: Let frozen cranberries thaw a bit or you will find your batter difficult to mix properly. This photo was taken a few years ago; I may have used two smaller pans unless I had doubled the recipe.

    1. You have a great happy family photo, including the pooch. What breed is your dog, it’s hard to tell in the photo.

        1. Hey Dora, another little sister has come to roost at Eddy’s coop. Nice to see you here. 🙂

EBS, I’m still waiting for the baking you promised me last week. When is it arriving? I’m getting hungry and may have to eat chocolate if I have to wait much longer!!

          1. Breaky Bones! i missed you. i was just doing housekeeping here but there were tech difficulties. my site was left with some mighty weird stuff in the recipe department 😆 I have to fix it but im also in the middle of my own housekeeping in my OTHER HOUSE.
